These substances have the effect of slowing down gastric emptying and, in addition, minimising the postprandial rise in glucose levels. Fenugreek is also recommended for people with cholesterol problems. When used properly, it contributes to lowering total cholesterol, LDL ‘bad’ cholesterol, triglycerides and VLDL – very low-density lipoproteins. All thanks to the steroidal saponins, which enhance the metabolism of cholesterol and its conversion in the liver to bile acids, whose excretion they stimulate.
